Oxtail
Oxtail is a flavorful, gelatin-rich cut from the tail of the cow, prized for its deep beefy taste and melt-in-your-mouth texture when slow-cooked. Perfect for braising, stews, soups, or slow-cooked sauces, oxtail delivers a rich, hearty flavor that enhances any meal.
This oxtail comes from our Dexter/Angus cross cattle, a breed well-suited to pasture-based systems. Born and raised at another Kentucky farm and finished at Growing Roots Farm using rotational grazing practices. Our beef is 100% grass-fed and grass-finished, producing clean, naturally flavorful meat without added hormones or antibiotics.
Cooking Suggestions & Temperature Guidance
Oxtail requires slow cooking to break down connective tissue and develop its signature richness:
-
Best methods: Braise, slow cook, pressure cooker, or stew
-
Heat: Low and slow
-
Seasoning: Salt, pepper, garlic, herbs, or a rich stock
-
Finish: Cook until the meat easily falls off the bone
Internal Temperature (for tenderness):
-
Fork-tender: 190–205°F
Oxtail is best enjoyed after several hours of slow cooking to maximize flavor and tenderness.
