🍽 Cooking Notes

Lamb rib chops cook quickly and are best prepared with high-heat methods:

  • Grilled over direct heat and finished with a short rest

  • Pan-seared in a hot skillet and finished with butter and herbs

  • Broiled for a fast, evenly cooked result

Recommended Internal Temperatures (measured at thickest part):

  • Rare: 125°F (remove from heat at ~120°F)

  • Medium-rare: 130–135°F (most popular)

  • Medium: 140–145°F

Rest for 5–10 minutes before serving. Cooking beyond medium is not recommended, as it can reduce tenderness.
