Our T-Bone comes from a 75% Dexter and 25% Angus beef blend. The cattle are raised using pasture-based practices, with the beef 100% grass-fed and grass-finished, producing naturally flavorful beef with excellent texture and character.

Cooking Suggestions & Temperature Guidance

T-Bone steaks are best cooked quickly over high heat to develop a flavorful crust while keeping the center tender and juicy:

  • Best methods: Grill, cast-iron sear, or broil
  • Heat: High heat
  • Seasoning: Salt and pepper or your favorite steak seasoning
  • Tip: Sear the steak well on both sides and pay attention to the tenderloin, which can cook slightly faster than the strip portion
  • Finish: Rest 5–10 minutes before serving

Internal Temperature (pull approximately 5°F early):

  • Rare: 120–125°F
  • Medium-rare: 130–135°F — recommended
  • Medium: 140–145°F
  • Medium-well: 150°F+
