This brisket comes from our Dexter cattle, a heritage breed well-suited to pasture-based systems. Raised at Growing Roots Farm using rotational grazing practices, our beef is 100% grass-fed and grass-finished, producing naturally flavorful meat without added hormones or antibiotics.

Cooking Suggestions & Temperature Guidance

Brisket requires slow, moist heat to reach peak tenderness:

  • Best methods: Slow oven roast, smoker, braise, or slow cooker

  • Heat: Low and slow

  • Seasoning: Salt, pepper, garlic, smoked paprika, or dry rubs

  • Finish: Rest 15–20 minutes before slicing across the grain

Internal Temperature (for tenderness):

  • Fork-tender / pull-apart: 195–205°F

Cook until the meat is tender and easily slices or shreds.
