This oxtail comes from our Dexter cattle, a heritage breed well-suited to pasture-based systems. Raised at Growing Roots Farm using rotational grazing practices, our beef is 100% grass-fed and grass-finished, producing clean, naturally flavorful meat without added hormones or antibiotics.

Oxtail requires slow cooking to break down connective tissue and develop its signature richness:

  • Best methods: Braise, slow cook, pressure cooker, or stew

  • Heat: Low and slow

  • Seasoning: Salt, pepper, garlic, herbs, or a rich stock

  • Finish: Cook until the meat easily falls off the bone

Internal Temperature (for tenderness):
