This cut comes from our Dexter cattle, a heritage breed well-suited to pasture-based systems. Raised at Growing Roots Farm using rotational grazing practices, our beef is 100% grass-fed and grass-finished, delivering naturally flavorful meat without added hormones or antibiotics.


Cooking Suggestions & Temperature Guidance

Short ribs shine when cooked slowly to break down connective tissue:

  • Best methods: Braise, slow cook, oven roast, or smoker

  • Heat: Low and slow

  • Seasoning: Salt, pepper, garlic, herbs, or a barbecue-style rub

  • Finish: Rest 10–15 minutes before serving; can be shredded or served on the bone

Internal Temperature (for tenderness):

  • Fork-tender: 190–205°F
