Picanha—also known as the top sirloin cap—is a flavorful, tender cut prized for its distinctive fat cap and rich beef character. Cut from the top of the sirloin, picanha offers an excellent balance of tenderness and bold flavor, with the fat cap naturally basting the meat as it cooks.

This cut performs beautifully when cooked whole or sliced into steaks, making it a favorite for grilling, roasting, and Brazilian-style preparations. Simple seasoning allows the natural quality of grass-fed beef to shine.

This picanha comes from our Dexter cattle, a heritage breed well-suited to pasture-based systems. Raised at Growing Roots Farm using rotational grazing practices, our beef is 100% grass-fed and grass-finished, resulting in clean, beef-forward flavor without added hormones or antibiotics.


Cooking Suggestions & Temperature Guidance
