This tri-tip comes from our Dexter cattle, a heritage breed well-suited to pasture-based systems. Raised at Growing Roots Farm using rotational grazing practices, our beef is 100% grass-fed and grass-finished, producing rich, naturally beefy flavor with excellent texture.

Cooking Suggestions & Temperature Guidance

Tri-tip is best cooked with moderate to high heat and allowed to rest before slicing:

  • Best methods: Grill, oven roast, smoker, or cast-iron sear

  • Heat: Moderate-high for roasting; high heat for searing

  • Seasoning: Salt, pepper, garlic, herbs, or a short marinade

  • Finish: Rest 5–10 minutes, then slice thin against the grain

Internal Temperature (pull 5–10°F early for best results):

  • Rare: 120–125°F

  • Medium-rare (recommended): 130–135°F

  • Medium: 140–145°F

  • Well done: 150°F+ (not recommended for best tenderness)
