This New York strip steak comes from our Dexter cattle, a heritage breed well-suited to pasture-based systems. Raised at Growing Roots Farm using rotational grazing practices, our beef is 100% grass-fed and grass-finished, producing naturally flavorful beef with excellent texture and consistency.

Cooking Suggestions & Temperature Guidance

New York strip performs best with high-heat cooking and a short rest:

  • Best methods: Grill, cast-iron sear, or broil

  • Heat: Medium-high to high

  • Seasoning: Salt and pepper or a simple steak rub

  • Finish: Rest 5–10 minutes before serving

Internal Temperature (pull 5°F early):

  • Rare: 120–125°F

  • Medium-rare (recommended): 130–135°F

  • Medium: 140–145°F

  • Medium-well: 150°F+ (not recommended for best texture)
